December Recipes – Mexican Avocado Dip

The recipe I have is something that I get asked to make every Christmas, but is not Christmas related. Mexican Dip.

Ingredients:

  • 3-4 ripe avocados
  • 1 pkt of taco mix
  • 1 tub of sour cream
  • I can of re-fried beans
  • 3-4 large tomatoes
  • grated cheese
  • Corn chips

This makes quite a bit of dip but it will all go.

Get a largish dish (I use a Pyrex 30cm glass rectangular dish) and put the re-fried beans evenly over the bottom.

Mash your avocados and and mix in 1/3 of the taco mix – this stops the avocados from going brown (you can add some lemon juice if you like).

Spread the avo mix over the top of the re-fried beans, then mix in the rest of the taco mix with the sour cream and layer on top of the avocado layer.

Dice up some tomatoes, layer on top…
